Ingredients
Eggs – 6 - 8
Onions - 2 Big chopped finely (In US big is huge....)
Curry leaves - 5 to 10 leaves
Green Chillies (Thai Chillies) - 5 to 6 slit (Use according to ur level of taste/heat)
Mustard seeds (Rai) - 1 teaspoon
Jeera (cumin seeds) - 1 teaspoon
Cilantro/Coriander (Kothmir) - a handful
Cilantro/Coriander (Kothmir) - a handful
Turmeric Powder - ¼ teaspoon
Oil - 2-3 tablespoon
Red Chilli Powder - to taste
Dhaniya Powder - 1 teaspoon
Pav Bhaji Masala - 1 tablespoon
Salt to taste
Butter(unslated) - 2tablespoon(Optional)
Preparation
Boil & Peel the Eggs in some oil fry the eggs and make slit or poke with a fork, keep aside
In a Pressure Pan/Cooker add the oil add Mustard, Jeera, curry leaves, add the onions, turmeric ,salt and Pressure cook till 1-2 Whistles(This makes the onions a little bit sweet)...Now add the Green chillies, Red chilli powder,Dhaniya Powder,Jeera Powder, Pav Bhaji Masala fry for a minute now add the fried eggs and fry for sometime, add the butter until it melts Garnish with Kothmir/Cilantro and serve hot with rice or roti
